As a kid, I would have probably scoffed at creamed spinach. But now that I am an adult, I love it! It is rich, creamy and not too heavy. The cheesey goodness keeps me coming back to it. You can customize the creamed spinach to your liking.
What is creamed spinach?
You'll find creamed spinach in many American restaurants and steakhouses. This classic comfort food is quick and simple to prepare. This delicious creamy dish can be made in many different ways, but we've provided a base recipe that is rich, creamy, and simple without being too heavy. Because I want to be able to enjoy my dinner without having the need for a nap afterwards.
Ingredients for Creamed Spinach
The base of creamed spinach is a white creamy sauce. You can make white sauce in a variety of ways, but we used butter, milk, and flour to make a bechamel. This kept our sauce both creamy and lighter. It is then seasoned with nutmeg and salt before adding some Parmesan to give it a nice umami kick. When the sauce is just right, stir in some spinach.
Fresh or Frozen spinach?
You can use fresh spinach, but we used frozen spinach for convenience. If you want to use fresh spinach simply chop it up and sauté in a pan with some oil until the moisture is gone. Use 12 oz. To replace the frozen spinach, use 12 oz.
What else can I add?
There are many ways to customize our creamed-spinach recipe. It is a classic, simple version. You can also add some additional ingredients to your creamed greens to make it even more delicious.
- Heavy Cream If you want to make your creamed spinach EXTRA creamy replace 1/2 cup milk with heavy cream.
- Cream Cheese If you do not like to make bechamel sauces you can thicken white sauce by melting 4 oz. Cream cheese and milk can be used as the base of your creamed greens. The creamed greens will also have a tangy taste.
- Mozzarella- Top your creamed, wilted spinach with some shredded mozzarella. Place it in the over for a couple of minutes and let it melt.
- Artichoke Hearts – dice some artichoke heart and add them to the mixture.
- Onion- Dice an onion finely and sauté it with garlic at the start of the recipe.
Creamed Spinach
Ingredients
- 12 oz. frozen chopped spinach* $1.69
- 4 Tbsp butter $0.56
- 2 cloves garlic, minced $0.16
- 1/4 cup all-purpose flour $0.04
- 1.5 cups whole milk $0.32
- 1/3 cup grated Parmesan $0.59
- 1/8 tsp nutmeg $0.02
- 1/8 tsp salt (or more to taste) $0.01
- 1/8 tsp freshly cracked black pepper $0.01
Instructions

Squeeze out any excess moisture after fully thawing the spinach. Set aside the spinach.

Melt butter in a large pan over medium heat. Add the garlic minced and continue to sauté over medium heat for approximately one minute.

Add the flour into the skillet. Continue to stir and cook the flour and butter for another two minutes.

Whip the milk and butter into the flour. Continue to whisk until the sauce reaches a simmer. At this point, it will thicken.

Continue to whisk the sauce while adding the Parmesan. Cook until the Parmesan has melted into the sauce. (1-2 minutes). Season the sauce by adding nutmeg and salt.

Stir the spinach until it is evenly mixed into the sauce. Taste the spinach and adjust salt if necessary. Enjoy!

Step-by-step photos on how to make creamed spinach
Thaw 12 oz. Squeeze out any excess moisture from frozen spinach (it should be approximately 1.5 cups after thawing and squeezing). If you are using fresh spinach, chop it roughly and sauté in a pan with some oil until the majority of the moisture is cooked off.
Melt 4 tbsp of butter in a large pan over medium heat. Add 2 garlic cloves and sauté for about a minute.
Continue to cook and whisk the butter and flour mixture for about two minutes (it should be bubbling the entire time). Continue to cook the butter mixture and whisk it for two minutes.
Stir in 1.5 cups of whole milk to the butter and flour roux.
Continue to cook the white sauce and whisk it until it returns to a simmer. At this point, it will thicken.
Continue to cook and whisk until the Parmesan melts into the sauce.
Add 1/8 teaspoon nutmeg to the sauce. Also, add 1/8 teaspoon salt and 1/8 teaspoon freshly cracked pepper. Stir everything together.
Stir the spinach into the sauce.
Add more salt to the spinach cream if necessary. Warm creamed spinach is delicious with any meal.
